Marinated wild garlic in Japanese-Korean spices

Ingredients

  • Wild Garlic Greens 15 oz
  • Sugar ¾ cup
  • Rice Vinegar for Sushi ¾ cup
  • Water ¾ cup
  • Coarse Salt 1 tablespoon
  • Chinese Five Spice 1 tablespoon
  • Ground Korean Red Pepper 1½ teaspoons

Step-by-Step Guide

Step 1

Rinse the wild garlic well and place it in a glass dish or jar.

Step 2

In a saucepan, combine sugar, vinegar, water, salt, spice mix, and red pepper. Bring to a boil over medium heat, stirring until the sugar and salt dissolve. Remove from heat and pour over the wild garlic.

Step 3

Allow to cool, cover, and leave in the refrigerator overnight.
