Marinated sweet peppers with lemon
Ingredients
- Sweet Pepper 4 pieces
- Olive Oil 0 fl oz
- Citrus Zest Mix 2 pieces
- Garlic 2 cloves
- Meyer Lemon Juice 0 fl oz
- Oregano 3 stems
- Coarse Salt ½ teaspoon
- Ground Black Pepper 0.1 teaspoon
Step-by-Step Guide
Step 1
Preheat the oven to 430°F.
Step 2
Place the peppers on a baking sheet, brush with 1 tablespoon of olive oil, and roast until soft and slightly charred, about 30–35 minutes. Transfer to a bowl, cover with plastic wrap, and let sit for a while. Peel off the skin and seeds.
Step 3
Cut the peppers into thin strips and transfer to a bowl. Drizzle with lemon juice, sprinkle with zest, minced garlic, oregano, salt, and pepper. Add olive oil and gently mix.
