Marinated Shiitake Mushrooms with Ginger
Ingredients
- Dried Chinese mushrooms 4 cups
- Soy Sauce 1 cup
- Champagne Vinegar 1 cup
- Sugar ¾ cup
- Grated Ginger Root 2 pieces
Step-by-Step Guide
Step 1
Transfer the mushrooms to a bowl and pour in 5 cups of boiling water. Press down slightly and let sit for 15 minutes. Drain and transfer the mushrooms to a bowl, reserving 2 cups of the mushroom liquid.
Step 2
In a pot, combine the mushrooms, reserved liquid, soy sauce, vinegar, sugar, and peeled pieces of ginger. Bring to a boil, reduce heat, and simmer, stirring, for 30 minutes. Remove from heat and let cool.
Step 3
Pack into jars, seal tightly, and refrigerate for 2 weeks.
