Marinated pumpkin in maple syrup, mustard, and allspice
Ingredients
- Butternut Squash 5 lbs
- Onion 1 head
- Apple Cider Vinegar 15 fl oz
- Water 10 fl oz
- Maple syrup 5 fl oz
- Mustard Greens 1 teaspoon
- Spices 8 pieces
- Chili Flakes ¼ teaspoon
Step-by-Step Guide
Step 1
In a large pot, bring water to a boil and add a generous amount of salt. Add the pumpkin and sliced onion, and cook for 3 minutes. Then, using a slotted spoon, quickly transfer to ice. Cool, dry well, and transfer to a large bowl.
Step 2
Bring to a boil the vinegar, water, maple syrup, mustard, black pepper, chili, and 4 teaspoons of salt. Pour the marinade over the vegetables.
Step 3
Place a plate on top and weigh it down. Chill and refrigerate for 3 days.
