- Sugar 4 tablespoons
- Salt 1 tablespoon
- Water 10 fl oz
- Green peppercorns 10 pieces

Peel the pumpkin and remove the seeds. Cut into thin strips.

Bring the water to a boil.
Step 3
Wrap the peppercorns in a napkin and crush them with a rolling pin, mallet, or heavy skillet to break them.
Step 4
Mix the salt, sugar, and pepper.
Step 5
Pour in boiling water and stir until the sugar and salt dissolve.
Step 6
Place the pumpkin in a liter jar, add the vinegar, and pour in the hot brine.
Step 7
Let it sit for 3 days.
