Recipe for 1 liter of marinade.

Ingredients

  • Salt 2 tablespoons
  • Sugar 4 tablespoons
  • Green peppercorns 5 pieces
  • Ground clove 5 pieces
  • Bay leaf 2 pieces
  • Fresh Mushrooms 0 lbs
  • Vinegar essence 5 tablespoons

Step-by-Step Guide

Step 1

Clean the mushrooms of needles and moss, discard any that are wormy.

Step 2

Trim the small caps.

Step 3

Cut the large caps and slice them into 4 pieces.

Step 4

Slice the stems into rings.

Step 5

Pour 1 liter of water into a pot.

Step 6

Add a handful of mushrooms.

Step 7

Immediately add salt, sugar, pepper, cloves, bay leaves, and put on the heat.

Step 8

After boiling, let it simmer for 1–2 minutes.

Step 9

Pour in 5 tablespoons of vinegar (the boiling will stop).

Step 10

After it boils again, remove from heat, let it cool completely, and transfer to glass jars.

Step 11

The marinade should completely cover the mushrooms. Pour olive or sunflower oil on top (to seal the product).

Step 12

Cover with a plastic or plastic lid (like mine).

Step 13

After 5–6 weeks, enjoy with a chilled shot glass.
