  • Cucumbers ½ pieces
  • Chicken Egg 1 piece
  • Meyer Lemon Juice 1½ spoons
  • Vegetable Oil 3 spoons
  • Olive Oil 0 fl oz
  • Goat cheese 0 oz
  • Parsley 1 stalk
  • Dill 1 stalk
  • Toasts 2 pieces
  • Breadcrumbs to taste
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Make the mayonnaise. Crack the egg and pour it into a bowl, add a teaspoon of lemon juice and a pinch of salt. Grate fresh horseradish finely and add it to the egg.

Step 2

Pour in vegetable oil (such as corn oil) and two teaspoons of olive oil. Add finely chopped parsley and blend with a blender until smooth, with flecks of greenery. If necessary, add a little more vegetable oil. You will need a small amount of mayonnaise, but it's not worth the effort if you're using less than one egg.

Step 3

Clean the fresh herring, trim the head, use a knife to detach the flesh while cutting along the backbone, and remove the fillets from both sides. Carefully cut off the top edge along with the fins, then remove the lower part with the ribs.

Step 4

Drizzle the herring fillet with three teaspoons of olive oil, add a little lemon juice. Lightly salt, turn the fish in the marinade a few times, and let it sit for just a couple of minutes.

Step 5

Slice the radishes into thin rounds. Use a narrow cutter to remove a small cylinder from the turnip and also cut it into thin rounds. Use a teaspoon to scoop out small balls of flesh from the cucumber. However, you can also prepare the cucumber and turnip differently — whichever way you prefer.

Step 6

Lightly sprinkle the cucumbers, radishes, and turnips with salt, drizzle with a little lemon juice, add a teaspoon of olive oil, mix well, and let sit for two minutes.

Step 7

Arrange the marinated herring fillets on plates. Next to them, place pieces of goat cheese, and sprinkle the fish with toasted breadcrumbs (or first toast a piece of dark bread in olive oil, then crumble it). Add cucumber balls and slices of radish and turnip.

Step 8

Drizzle everything with mayonnaise — about one to two teaspoons per serving. Add a bit of dill and rye crisps, and finally, drizzle with olive oil. Season with pepper to taste. It's not necessary to garnish this dish in the spirit of the new Scandinavian wave: after all, the main focus here is the combination of fish, goat cheese, and vegetables.
