  • Chicken fillet 5 oz
  • Corn Flour for Polenta 4 spoons
  • Mixed salad greens 0 oz
  • Scallions 4 stalks
  • Red Long Chili Peppers 1 piece
  • Lime 1 piece
  • Garlic 2 cloves
  • Grated Ginger Root 1 piece
  • Mild Chili Spice 1 piece
  • Ground coriander 1 bunch
  • Fish Oil 2 spoons
  • Soy Sauce 3 spoons

Step-by-Step Guide

Step 1

In a bowl, combine minced garlic, grated ginger root, chili, chopped coriander, fish sauce, soy sauce, and 6 tablespoons of vegetable oil. Cut the chicken fillet into pieces and add it to the marinade. Mix well, cover with plastic wrap, and refrigerate overnight.

Step 2

Pour oil into a deep skillet or wok, filling it two-thirds full, and heat it over medium heat until it reaches 355°F.

Step 3

Remove the chicken from the marinade and shake off any excess. Place cornmeal on a plate and coat the chicken thoroughly, ensuring all pieces are covered.

Step 4

Place the chicken in the oil and fry for 3-4 minutes until cooked through and golden brown.

Step 5

In two bowls, place the salad leaves, then top with the chicken. Drizzle with your choice of salad dressing and garnish with chopped green onions and red bell pepper. Serve with lime wedges.
