Marinated fennel with anise
Ingredients
- Star anise 6 pieces
- Fennel 5 lbs
- Vinegar essence 15 fl oz
- Oranges 1 piece
- Coarse Salt 5 tablespoons
- Sugar 2 tablespoons
Step-by-Step Guide
Step 1
Clean the fennel and slice it into thin rings.
Step 2
From the orange, cut 3 long strips of zest.
Step 3
In a saucepan, bring 360 ml of water, vinegar, salt, and sugar to a boil.
Step 4
Meanwhile, fill 3 half-liter jars halfway with fennel. Place a strip of orange zest and 2 star anise pieces in each jar. Fill the jars to the top with the remaining fennel and press down slightly.
Step 5
Pour the marinade over, leaving about 1–1.5 cm at the top. Seal tightly with lids and let cool. Serve in about 3–5 days.
