Marinated Artichokes

Ingredients

  • Salt to taste
  • Parsley 3 stalks
  • Safflower Oil 9 tablespoons
  • Artichoke bottoms 12 pieces
  • Champagne Vinegar 3 tablespoons
  • Lemon 1 piece

Step-by-Step Guide

Step 1

Juice the lemon and pour half into a large bowl of water. Cut the stems off the artichokes and remove the tough outer leaves. Trim the tips of the remaining leaves. Cut the artichokes in half lengthwise and remove the choke. Drizzle the artichokes with the juice from the remaining half of the lemon and place them in the lemon water.

Step 2

Bring salted water to a boil in a large pot, add the artichokes, and bring back to a boil. Reduce the heat, cover, and cook for 25 minutes until they are tender. (Try gently pulling off a leaf – it should come off easily). Drain the water by inverting the artichokes and pressing them gently.

Step 3

Place the artichokes in a dish cut side up. Whisk the vinegar with a pinch of salt and gradually mix in the oil. Pour the dressing over the artichokes, sprinkle with finely chopped parsley, and serve.
