Description
Marinade for 1–2 kg of fillet. Marinating time is 1–2 hours. Recommended for fatty fish and seafood.
Ingredients
- Shallot 5 oz
- Water 5 fl oz
- Dry White Wine 5 fl oz
- White Pepper (whole) 2 teaspoons
- Salt to taste
- Lemongrass 4 stalks

Step 1
Peel the shallots and chop them coarsely.
Step 2
Add water, wine, salt, and coarsely chopped lemongrass to the shallots.
Step 3
In a mortar, crush the white peppercorns and add them to the marinade. Mix well.
