Marinade for Poultry with Chili, Honey, and Juniper
Sauces and Marinades • European
Description
You can use any mustard, even one with honey. Or you can use grainy mustard — it looks nicer:) I prefer buckwheat honey for its unique bitterness. It's best to use red chili pepper and chop it very finely. Ground chili works too, but it’s not quite the same. If you don't have olive oil with pepper, you can use any oil. I always have a jar or two of sun-dried tomatoes in olive oil at home. The tomatoes get used up quickly, but the oil remains. This is the perfect case for it. The ingredients are calculated for 1.5 kg of meat. And the most important thing — for this kebab, I prefer turkey fillet — it’s more tender than chicken.
