- Toasted Cumin Seeds 1 teaspoon
- Nigella Seeds 1 teaspoon
- Chili Flakes 1 teaspoon
- Coriander essential oil 1 teaspoon
- Olive Oil 10 fl oz
- Dry White Wine 10 fl oz
- Oranges 1 piece
- Coarse Salt 1 teaspoon
- Thyme 8 sprigs
- Parsley 8 sprigs
- Cilantro 8 sprigs
- Garlic 6 cloves
- Grated Ginger Root 1 piece
Step-by-Step Guide
Step 1
In a well-heated small skillet, toast the cumin, fennel, red pepper flakes, and coriander until fragrant. Lightly crush and transfer to a bowl.
Step 2
Add the olive oil, white wine, grated orange zest, salt, chopped thyme, parsley, cilantro, minced garlic, and grated ginger root. Mix well.
Step 3
Place the meat in the marinade, mix, cover, and refrigerate overnight. Then grill.
