Ingredients
- Macaroni 15 oz
- Pancetta 5 oz
- Cream 15 fl oz
- Gruyère cheese 10 oz
- Parmesan Cheese 5 oz
- Cheshire Cheese 5 oz
- Garlic 1 clove
- Dijon Mustard 2 teaspoons
- Paprika ½ teaspoon
- Chives 3 tablespoons
Step-by-Step Guide
Step 1
Bring salted water to a boil in a large pot. Add the macaroni and cook. Drain, cover, and keep warm.
Step 2
Meanwhile, place diced pancetta in a large skillet and fry, stirring, over high heat for 4 minutes until golden and crispy. Transfer to a paper towel. Reduce heat to medium and add the cream. After a while, add all the grated cheeses, minced garlic, mustard, and paprika. Simmer for 5 minutes until the cheese is fully melted and the sauce thickens. Season with spices.
Step 3
Add the macaroni and pancetta to the skillet and simmer for 1 minute until heated through. Add 2 tablespoons of chopped chives, mix, and serve, garnished with the remaining chives.
