
Low-Calorie Mayonnaise

Description
Many people are afraid of mayonnaise like the plague, largely due to its high calorie content. However, there's good news. In this recipe, the calorie count is reduced, making mayonnaise even more appealing.
Ingredients
- Chicken Egg 2 pieces
- Dijon Mustard 1 tablespoon
- Vegetable Oil 10 fl oz
- Lemon ½ pieces
- Salt to taste
- Dessert Yogurt 5 fl oz
- Champagne Vinegar 1 tablespoon
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Separate the egg yolks from the egg whites. The egg whites can be frozen and used later in desserts.
Step 3
Whisk the egg yolks.
Step 4
Add the mustard and whisk again.
Step 5
Gradually incorporate the oil in a thin stream while continuously whisking (this will take a few minutes). If you add the oil too quickly, the yolks and oil will separate and will not come back together into a cohesive mixture.
Step 6
Once about half of the oil has been incorporated, add the vinegar.
Step 7
Gradually add the remaining butter while continuing to whisk steadily.
Step 8
Season the mayonnaise.
Step 9
Squeeze lemon juice into the mayonnaise.
Step 10
Mix the mayonnaise with the yogurt until smooth.
Step 11
Store in a sterilized jar in the refrigerator for 5 to 7 days.
