Ingredients
- Tartlets 4 pieces
- Lobster tails 2 pieces
- Mayonnaise 4 tablespoons
- Cream 2 tablespoons
- Meyer Lemon Juice to taste
- Salt a pinch
- Sugar a pinch
- Kaviar to taste
- Dill to taste
- Gelée 5 oz
- Iceberg Lettuce to taste
Step-by-Step Guide
Step 1
Mix mayonnaise with cream, lemon juice, salt, and sugar.
Step 2
Fill the tartlet shells with the mixture.
Step 3
Slice the lobster meat and arrange it beautifully on top of the mayonnaise.
Step 4
Drizzle the tartlets with white wine gelée.
Step 5
Place in the refrigerator.
Step 6
Arrange clean lettuce leaves on four serving plates and place the tartlets on top.
Step 7
Garnish each tartlet with 1 teaspoon of caviar and dill.
Step 8
Tartlets can be baked from salty shortcrust pastry. Unused tartlet shells can be frozen.
