Ingredients
- Cilantro ½ bunches
- Ground coriander 2 spoons
- White Beans 30 oz
- Onion 4 heads
- Garlic 2 cloves
- Malt Vinegar 2 spoons
- Ocean salt to taste
- Vegetable Oil to taste
Step-by-Step Guide
Step 1
Soak the beans. The longer they sit in water, the softer the lobio will be, so it's best to soak the beans overnight.
Step 2
Rinse the beans, place them in a pot, cover with water, and put on the heat. Fifteen minutes after it comes to a boil, drain the water.
Step 3
Again, pour water over the beans and cook until tender — at least one and a half to two hours. Some people cook them for up to five hours, adding water as needed. If you can easily mash a bean between your fingers, it's done.
Step 4
While the beans are cooking, finely chop the onion and sauté it in vegetable oil until golden brown.
Step 5
Mash the beans in a pot until about every second bean is crushed. There's no need to count the beans—just estimate visually. Mix the beans with onions, finely chopped cilantro, crushed garlic, coriander, and wine vinegar. Add salt to taste. Serve hot. This results in a delicious bean mash, which is not just an appetizer but a full-fledged main dish.
