Description

A culinary trick. Flan is a classic Spanish dessert, something between crème caramel and mousse—light, sweet, and delicate. When prepared correctly, liver can take on a surprisingly sweet flavor. This recipe incorporates anise and apples (as a garnish) along with flour and eggs, resulting in a fluffy liver cake. To bring it back to its meaty roots, the flan is drizzled with a demi-glace upon serving.

Ingredients

  • Veal Liver 10 oz
  • Onion 5 oz
  • Chicken Egg 3 pieces
  • Whole egg 6 pieces
  • Sugar 0 oz
  • Butter 5 oz
  • Wheat Flour 0 oz
  • Green Apples 3 pieces
  • Star anise 1 piece
  • Vegetable Oil 2 spoons
  • Demi-Glace Sauce 0 oz

Step-by-Step Guide

Step 1

Chop the onion and sauté it in a tablespoon of vegetable oil. Pass it through a meat grinder along with the liver. Mix the eggs, egg yolks, flour, 35 grams of sugar, and butter using a mixer, then add it to the liver mixture. Season with salt and pepper, and mix well. Distribute the mixture into muffin tins and bake for 15 minutes at 355°F.

Step 2

Remove the seeds from the apples. Slice a quarter of one apple into very thin wedges. Peel the remaining apples, cut them into large cubes, and sauté them in vegetable oil. At the end, add star anise and a generous pinch of sugar.

Step 3

Arrange the flan, sautéed apples, slices of raw apple, and pickled vegetables on plates. Drizzle with hot demiglace.
