Description

It has somehow become a tradition to create baked goods from liver. First, there were pancakes, and now we have the famous liver cake that gained popularity in the Soviet Union. It is so beloved on our site that we couldn't resist including it in our 'Golden Thousand'.

Ingredients

  • Beef Kidneys 35 oz
  • Chicken Egg 3 pieces
  • Wheat Flour 10 oz
  • Milk 15 fl oz
  • Onion 2 pieces
  • Carrot 2 pieces
  • Salt to taste
  • Mayonnaise 1 can
  • Ground Black Pepper to taste

Step-by-Step Guide

Cut the liver into large pieces.

Grind using a meat grinder or food processor to create minced meat.

Add the eggs to the minced meat and mix well.

Pour in the milk and stir again.

Add salt, pepper, and flour. Mix thoroughly again. The consistency should be like that of pancake batter — fluid.

Pour the liver mixture into a well-heated skillet (previously greased with vegetable oil) using a ladle. The process is the same as when making pancakes. The thickness of the layers should not exceed 5 mm.

Slice the onion into thin half-moons (or quarters, if the onion is large).

Grate the carrot using a large grater.

In a separate skillet, sauté the onion until golden brown.

Add the carrots and continue sautéing for another 4–5 minutes, until the vegetables are tender.

Assemble the cake. To do this, place a layer of cake on a plate, spread a thin layer of mayonnaise on it, then add a thin layer of onions and carrots on top. Next, place the next layer of cake and continue this process. If you have many layers, for convenience, you can make two smaller cakes instead of one tall one, as this will make them easier to slice.
