Linguine with Wild Mushrooms and Bacon
Ingredients
- Bacon 4 pieces
- Fresh Mushrooms 10 oz
- Garlic 1 clove
- Green Tagliatelle Pasta 10 oz
- Dry White Wine ¼ cup
- Chopped Sage Leaves 1 teaspoon
- Cream (40%) 5 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Chopped Sage Leaves 1 tablespoon
- Grated Pecorino Pepato Cheese to taste
Step-by-Step Guide
Step 1
In a well-heated skillet, fry the finely chopped bacon until crispy.
Step 2
Add the thinly sliced mushrooms and sauté for 7-15 minutes until soft and golden.
Step 3
Meanwhile, boil the pasta in salted water until al dente.
Step 4
Add the minced garlic and thyme to the mushrooms and sauté for another minute.
Step 5
Pour in the wine and cook for a little longer until the wine has slightly evaporated.
Step 6
Remove the sauce from heat and add the cream and parsley. Season with pepper (you may not need to add salt since the bacon is already salty). Add the pasta and gently toss to combine.
Step 7
Serve, sprinkled with Parmesan cheese.
