Linguine alla Carbonara
Ingredients
- Green Tagliatelle Pasta 5 oz
- Farm fresh eggs 2 pieces
- Bacon 5 pieces
- Garlic 2 cloves
- Salt to taste
- Ground Black Pepper to taste
- Dry White Wine 0 fl oz
- Grated Pecorino Pepato Cheese to taste
Step-by-Step Guide
Step 1
Cook the linguine in salted boiling water until al dente.
Step 2
Cut the bacon into small strips or cubes.
Step 3
Fry it until golden brown.
Step 4
Add pepper to taste.
Step 5
Finely chop the garlic and add it to the bacon.
Step 6
Cook for one to two minutes.
Step 7
Pour in the white wine.
Step 8
Separate the egg whites from the yolks.
Step 9
Whisk the egg whites with grated cheese, salt, and pepper using a fork.
Step 10
Add the pasta to the bacon along with half a cup of the water it was cooked in.
Step 11
Pour in the whisked egg whites, mix everything thoroughly, and turn off the heat.
Step 12
Serve the pasta on plates, placing a yolk on top.
Step 13
Serve the dish hot.
