Lime Marinade with Rum and Mint

This is a great marinade for grilled chicken, pork, tofu, shrimp, and scallops. The amount of marinade is suitable for 1–1.2 kg of meat.
Ingredients
- Shallot 2 pieces
- Chopped Sage Leaves 0 oz
- Rum ¼ cup
- Grated Lemon Zest 1 tablespoon
- Honey 3 tablespoons
- Lime Juice ½ cup
- Coarse Salt 1 tablespoon
- Vegetable Oil 2 tablespoons

In a food processor, combine the peeled shallots, mint, rum, lime zest, lime juice, honey, and vegetable oil.

Blend until the shallots are in small pieces.
