Description
Traditionally, pesto is served with trofie pasta, which can be made at home or found on the shelves of grocery stores.
Ingredients
- Basil 2 bunches
- Parmesan Cheese 5 oz
- Pistachios 0 oz
- Garlic 1 clove
- Olive Oil ½ glasses
- Salt to taste
Step-by-Step Guide
Step 1
In a large pot, bring lightly salted water to a boil. Blanch the basil for 10 seconds, then transfer it to an ice bath. You can place a strainer over a bowl of ice water beforehand to make it easier to retrieve the basil.
Step 2
Squeeze out the basil and pat it dry with paper towels.
Step 3
In a blender, combine the basil, Parmesan cheese, pine nuts, and garlic. Blend while gradually adding olive oil. Be careful not to over-blend the pesto — it should have a chunky, vibrant texture.
