  • Parmesan Cheese 5 oz
  • Pistachios 0 oz
  • Garlic 1 clove
  • Olive Oil ½ glasses
  • Salt to taste

In a large pot, bring lightly salted water to a boil. Blanch the basil for 10 seconds, then transfer it to an ice bath. You can place a strainer over a bowl of ice water beforehand to make it easier to retrieve the basil.

Squeeze out the basil and pat it dry with paper towels.

In a blender, combine the basil, Parmesan cheese, pine nuts, and garlic. Blend while gradually adding olive oil. Be careful not to over-blend the pesto — it should have a chunky, vibrant texture.
