Leek with Mustard Vinaigrette
Ingredients
- Leek 6 pieces
- Olive Oil 2 tablespoons
- Dijon Mustard 1 tablespoon
- Dijon Mustard 1 teaspoon
- Champagne Vinegar 2 teaspoons
- Coarse Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Trim the dark green leaves and roots from the leeks. Cut them in half lengthwise and rinse well under cold water.
Step 2
Steam the leeks until tender, about 10–12 minutes, then quickly transfer them to ice water. Drain and dry with a paper towel.
Step 3
In a small bowl, mix the olive oil, vinegar, both mustards, salt, and pepper.
Step 4
Arrange the leeks on a plate and drizzle with the vinaigrette.
