Lecho with Sweet Peppers
Ingredients
- Orange Bell Peppers 5 lbs
- Tomatoes 0 lbs
- Onion 10 oz
- Garlic 2 cloves
- Salt 2 tablespoons
- Sugar 4 tablespoons
- Vegetable Oil 5 tablespoons
- 9% Vinegar 2 tablespoons
Step-by-Step Guide
Step 1
Wash the tomatoes, dry them, and chop them in a food processor or pass them through a meat grinder (you can also cut them into quarters).
Step 2
Peel the onion and garlic, wash them, and dry them. Slice the onion into half rings.
Step 3
Remove the stems and seeds from the peppers, wash them, dry them, and cut them into small strips.
Step 4
Mix the tomatoes, onion, and sweet peppers, place everything in a pot, add salt and sugar, stir, and bring to a boil.
Step 5
Cook over medium heat for 20 minutes, stirring occasionally. Then add vegetable oil, minced garlic, and vinegar, stir the mixture, bring to a boil again, and cook for 5–7 minutes.
Step 6
Wash the jars with a soda or soapy solution, rinse well with cold running water. Then place them upside down over a pot of boiling water. Sterilize for 10–15 minutes. Remove the jars from the pot and let them cool completely.
Step 7
Distribute the salad into the sterilized jars, seal with prepared metal lids, and turn them upside down.
