Lecho with Bell Peppers and Tomatoes
Ingredients
- Orange Bell Peppers 105 oz
- Tomatoes 105 oz
- Sugar 10 fl oz
- Olive Oil 10 fl oz
- Vinegar essence 0 fl oz
- Salt 2 tablespoons
Step-by-Step Guide
Step 1
Wash the tomatoes and grind them in a meat grinder with the skin on.
Step 2
Wash the bell peppers and cut them into strips.
Step 3
Place the ground tomatoes in a pot and simmer for 15 minutes over high heat. Add salt, sugar, and olive oil. Bring to a boil.
Step 4
Add the sliced bell peppers to the tomatoes and let it simmer for 7 minutes.
Step 5
Add vinegar and let it simmer for another 2 minutes.
Step 6
Distribute the hot lecho into sterilized jars. Place the jars upside down and keep them warm.
