
Lecho Appetizer

Description
Yield — 7–8 jars of 500 ml each.
Ingredients
- Tomatoes 5 lbs
- Orange Bell Peppers 5 lbs
- Mild Chili Spice to taste
- Sugar ½ cup
- Salt 1 tablespoon
- Vegetable Oil 1 cup
- Vinegar essence 1 tablespoon
Step-by-Step Guide
Step 1
Pass the tomatoes through a meat grinder or place them in a blender and puree. First, blanch the tomatoes and remove the skin.
Step 2
Cook for 30 minutes.
Step 3
Add the peppers (cut into strips or cubes) to the tomatoes and cook for another 30–40 minutes, adding salt (1–2 tablespoons), sugar, and chopped chili pepper.
Step 4
Heat sunflower oil in a pan and gradually pour it into the lecho, covering with a lid to prevent splattering. At the end, add 1 teaspoon of 70% vinegar.
Step 5
Jar the mixture and store in a warm place.
