Lavash pizza with greens, gorgonzola, and roasted almonds
Ingredients
- Chopped almonds 5 oz
- Champagne Vinegar 1½ tablespoons
- Olive Oil 3 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Armenian Lavash 4 pieces
- Mixed salad greens 20 oz
- Goat cheese 5 oz
- Melted Cheese 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 355°F. Spread the almonds on a baking sheet and bake for 8-10 minutes until golden. Let cool and chop. Increase the oven temperature to 390°F.
Step 2
In a small bowl, mix the vinegar and olive oil. Season with salt and pepper.
Step 3
Cut the lavash into rectangles measuring 20x30 cm.
Step 4
Place 1 sheet of lavash on the baking sheet and bake for 2-3 minutes until golden. Quickly sprinkle with grated mozzarella and return to the oven for another 2-3 minutes until the cheese melts and the lavash becomes crispy.
Step 5
Meanwhile, mix the salad greens, almonds, and dressing. Remove the lavash from the oven and top with a quarter of the salad greens. Sprinkle with chopped gorgonzola on top. Repeat the same with the remaining lavash.
