Korean-Style Eggplants with Tomatoes
Ingredients
- Eggplants 2 pieces
- Tomatoes 2 pieces
- Orange Bell Peppers 2 pieces
- Onion 1 piece
- Garlic 6 cloves
- Vinegar essence 1 tablespoon
- Sugar 1 teaspoon
- Ground Black Pepper to taste
- Vegetable Oil 3 tablespoons
Step-by-Step Guide
Step 1
Peel the eggplants, cut them lengthwise into large wedges, and salt them well.
Step 2
Leave for about 30 minutes.
Step 3
Then squeeze them well and fry them in oil.
Step 4
Thinly slice the remaining vegetables and mix them with the fresh eggplants.
Step 5
Add garlic and spices.
Step 6
You can add a bit of cilantro (if you like).
Step 7
Helpful tip: to prevent eggplants from absorbing too much oil, squeeze them well before frying.
