Description
Yukhoe is a Korean dish made from raw beef, lightly marinated with soy sauce, green onions, honey, and garlic. It resembles tartare but has a more intense flavor—however, the concept of eating raw meat in Korea predates the emergence of tartare. It is served with julienned sweet Asian pears and a raw egg yolk.
Ingredients
- Veal Tenderloin 15 oz
- Asian Pear 1 piece
- Whole egg 2 pieces
- Toasted Sesame 0 oz
- Scallions 0 oz
- Soy Sauce 2 spoons
- Sesame Oil 1 tablespoon
- Honey 1 tablespoon
- Garlic 2 cloves
- Salt to taste
Step-by-Step Guide
Step 1
Prepare the necessary ingredients.
Step 2
In a large bowl, combine soy sauce, sesame oil, two tablespoons of sesame seeds, honey, minced garlic, half of the finely chopped onion, and salt.

Remove the membranes from the meat.
Step 4
Cut into thin strips.
Step 5
Mix the meat with the marinade and let it sit for 5 minutes.
Step 6
Peel the pear and cut it into matchsticks.
Step 7
Place the pear on a plate.
Step 8
Top with tartare and create a small indentation in it.
Step 9
Add a raw egg yolk.
Step 10
Garnish with sesame seeds and green onions.
