Ingredients
- Pearl barley 2 cups
- Milk 1 cup
- Poppy seed paste 1 cup
- Honey 3 tablespoons
- Black Currant Jam 2 tablespoons
Step-by-Step Guide
Step 1
Rinse the groats, add them to 3 liters of boiling water, and cook over moderate heat, skimming off the foam that forms.
Step 2
When the groats begin to release slime, drain the excess water, transfer the porridge to another pot, add the milk, and cook while stirring until thickened.
Step 3
Pour boiling water over the poppy seeds, let sit for 5 minutes, then drain the water, rinse the poppy seeds, pour boiling water over them again, and drain the water as soon as droplets of oil appear on the surface.
Step 4
Grind the soaked poppy seeds in a mortar, adding 1 teaspoon of water for every tablespoon of poppy seeds.
Step 5
Mix the prepared poppy seeds with the barley porridge, add honey, and heat over low heat for 5–7 minutes while continuously stirring.
Step 6
Serve the finished porridge with jam.
