Julienne
Appetizers • Portuguese
Description
If the meat is cut into strips, it already resembles julienne, because, in fact, julienne is not a dish but a way of cutting ingredients into thin strips. However, you can take it a step further: mix chicken meat with mushrooms and sauce, and then bake it in ramekins. This is essentially the familiar form and taste of julienne as an appetizer.

- Champignons 10 oz
- Sour Cream 10 oz
- Milk 15 fl oz
- Hard Cheese 5 oz
- Onion 5 oz

Step-by-Step Guide
Step 1
Prepare the necessary ingredients.
Step 2
Sauté the onion in vegetable oil until it becomes translucent.
Step 3
Add the mushrooms and sauté until all the moisture has evaporated.
Step 4
Sauté the chicken fillet in vegetable oil until lightly golden, then transfer it to an oven preheated to 355°F for 8 minutes.
Step 5
In a saucepan, toast the flour with 30 grams of butter.
Step 6
When the mixture begins to darken, add milk and whisk thoroughly. If the sauce is too thick, add a little more milk. Once the sauce thickens, stir in sour cream and remove from heat.

Combine the mushrooms with the chicken and sauce, and keep on the heat for a couple more minutes. Transfer the contents of the skillet into individual ramekins.
Step 9
Sprinkle the ramekins with cheese, grated on a coarse grater.
Step 10
Place in an oven preheated to 355°F and bake for 20-30 minutes until a golden crust forms on the cheese.
