Description

A minimal basic set of ingredients, with no distracting maneuvers. Carrots and onions are used in equal proportions, adding character to the broth. This recipe is inspired by a café in the town of Staritsa.

Ingredients

  • Beef 15 lbs
  • Water 10 qt
  • Carrot 10 oz
  • Onion 10 oz
  • Salt to taste
  • Green peppercorns to taste
  • Bay leaf to taste
  • Vegetable Oil to taste
  • Herbs to taste

Step-by-Step Guide

Step 1

Soak the beef overnight and rinse it. Place the meat in a pot and cover with water, adding whole peeled carrots and onions. Bring to a boil, skimming off any foam. Add salt, whole peppercorns, and bay leaves. Reduce the heat, cover with a lid, and simmer for 8 hours.

Step 2

After cooking, separate the meat from the bone and shred it into strands. Strain the broth.

Step 3

Grease the molds for the jellied meat with vegetable oil, place the meat inside, and pour in the broth. Leave to set completely for 2–3 hours, then transfer to the refrigerator for 7–8 hours.

Step 4

Serve on a plate, garnished with herbs.
