Jellied Meat Platter
Ingredients
- Beef 20 oz
- Veal 20 oz
- Pork Blood 20 oz
- Dry White Wine 5 fl oz
- Onion 1 head
- Veal Shank 20 oz
- Garlic 4 cloves
- Bacon 10 oz
- Thyme 5 sprigs
- Parsley 5 sprigs
- Tarragon 4 stems
- Salt to taste
Step-by-Step Guide
Step 1
Place all the meat, shank, and bacon in a large pot in one piece.
Step 2
Peel the onion and garlic, tie the herbs together with kitchen twine to make a bouquet garni, and add everything to the meat.
Step 3
Pour in the wine and water, bring to a boil, reduce the heat to the minimum, and let it simmer for 5 hours, adding salt at the very end.
Step 4
Once cooking is complete, remove everything from the pot and strain the broth.
Step 5
Let the meat cool, shred it, and chop it finely.
Step 6
Spread it on the bottom of molds and pour the broth over it, then place in the refrigerator until set.
