Italian Vegetable Pasta Soup
Ingredients
- Onion 2 heads
- Carrot 2 pieces
- Celery stalk 4 stalks
- Olive Oil 1 tablespoon
- Sugar 2 tablespoons
- Garlic 4 cloves
- Tomato Puree 2 tablespoons
- Bay leaf 2 pieces
- Thyme to taste
- Zucchini 3 pieces
- Beans 15 oz
- Tomatoes 15 oz
- Vegetable Broth 0 qt
- Grated Parmesan cheese 5 oz
- Pasta 5 oz
- Basil 1 bunch
Step-by-Step Guide
Step 1
In a large pot, heat the oil. Sauté the onion, carrot, and celery over low heat for 20 minutes until soft. Add the sugar, garlic, puree, herbs, and zucchini, and sauté for 4-5 minutes over medium heat.
Step 2
Add the beans and tomatoes, bring to a boil, and simmer for 20 minutes. Add half of the Parmesan and the pasta, and cook for 6-8 minutes until the pasta is done. Sprinkle with basil, the remaining cheese, and add spices to taste. The dish is ready.
