Italian Herb and Cheese Fried Potatoes
Ingredients
- Salad Potatoes 7 pieces
- Olive Oil 4 tablespoons
- Italian chopped parsley 1 tablespoon
- Grated Pecorino Pepato Cheese 2 cups
- Chopped Sage Leaves ¼ cup
- Salted Butter 4 tablespoons
- Coarse Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Peel the potatoes and slice them into sticks using a mandoline, as for French fries. Transfer to a large bowl and cover with ice water. Let sit for a while.
Step 2
Preheat the oven to 390°F (about 400 degrees Fahrenheit).
Step 3
Drain the potatoes and dry them well with a paper towel (it is very important that the potatoes are dry).
Step 4
Spread the potatoes on 2 baking sheets and drizzle with 2 tablespoons of olive oil. Sprinkle with herbs, cheese, and parsley. Then drizzle with the remaining olive oil and top with pieces of butter.
Step 5
Bake in the oven for about 45–50 minutes until the potatoes are cooked through.
Step 6
Toss the potatoes with the toasted cheese, season with salt and pepper.
