Irish oatmeal with cranberries and raisins
Ingredients
- Hercules Oats 5 oz
- 3.2% Milk 20 fl oz
- Maple syrup 2 tablespoons
- Salt a pinch
- Ground Nutmeg a pinch
- Cinnamon 1 piece
- Clove 1 piece
- Orange zest 1 teaspoon
- Dried cranberries with sugar 1½ tablespoons
- Brown Sugar 2 tablespoons
- Roasted Peanuts 1 cup
- Light Raisins, Seedless 1½ tablespoons
Step-by-Step Guide
Step 1
Pour the milk into a saucepan and place it over medium heat. Add a pinch of salt, ground nutmeg, 1 clove, a cinnamon stick, and orange zest. Bring the milk to a boil, then add the Hercules oats and cook over medium heat, stirring, for about 7–8 minutes until thickened. Remove from heat, discard the cinnamon stick and orange zest. Stir in the maple syrup, dried cranberries, and light raisins. Cover and let sit for a couple of minutes.
Step 2
Preheat the grill.
Step 3
Spoon the oatmeal into large ramekins (the largest you have). Sprinkle a generous layer of sugar on top of the oatmeal, then place under the very hot grill for 2–3 minutes until the sugar caramelizes. Serve immediately, topped with pecans to taste.
