Irish Oatmeal with Coconut Milk

Ingredients

  • Coconut Milk 15 fl oz
  • Oat flakes 5 oz
  • Cinnamon stick 1 piece
  • Maple syrup 0 fl oz
  • Fresh Berries to taste

Step-by-Step Guide

Step 1

Add coconut milk and the cinnamon stick to a pot, leave on medium heat for 3 minutes.

Step 2

Add the oat flakes to the coconut milk, stir, increase the heat, and bring to a boil.

Step 3

Reduce the heat to low and cook for 15-20 minutes, stirring occasionally.

Step 4

Turn off the heat and remove the cinnamon stick (the oatmeal should become quite 'dry').

Step 5

Add 30 ml of syrup, stir, and serve in bowls.

Step 6

Add berries and drizzle with more syrup on top.
