Indian Yogurt Parfait
Ingredients
- Mango 2 pieces
- Cardamom 2 pieces
- Natural Yogurt 10 oz
- Powdered Sugar 2 tablespoons
- Unsalted peanuts, shelled 0 oz
Step-by-Step Guide
Step 1
Peel the ripe mangoes, remove the pits. Set aside a couple of slices for decoration, and place the remaining flesh in a blender and blend into a puree. Mix the yogurt and powdered sugar into the puree and blend again. Scrape the seeds from the cardamom pods, crush the seeds with a rolling pin. Add the crushed seeds to the yogurt and mix well.
Step 2
Divide the yogurt into serving dishes, and sprinkle with lightly crushed pistachios on top. Garnish with mango slices. Cover the parfait with plastic wrap and refrigerate for a few hours or for convenience, overnight.
Step 3
Serve as a dessert or for breakfast.
