
Indian-Style Pumpkin Fritters with Curry and Basil

Ingredients
- Pumpkin 10 oz
- Onion 1 head
- Carrot 5 oz
- Curry 1 tablespoon
- Basil to taste
- Salt a pinch
- Sugar 1 tablespoon
- Chicken Egg 1 piece
- Wheat Flour 3 spoons
Step-by-Step Guide
Step 1
Grate the pumpkin on a coarse grater, finely chop the onion and carrot. Sauté the onion and carrot, then add the pumpkin and simmer for 5 minutes.
Step 2
While the vegetables are simmering, whisk the egg with salt, sugar, and curry powder. You can add basil to taste (either finely chopped fresh basil or dried basil).
Step 3
Combine the hot vegetables with the egg and whisk well. Add the flour and mix.
Step 4
Place the dough rounds on a preheated skillet greased with oil and fry them over low heat. They cook very quickly, so watch them closely to prevent burning.
