Hummus with Tahini, Cumin, Garlic, Lemon Juice, and Olive Oil
Sauces and Marinades • Jewish
Description
If you can't find tahini, it's okay to substitute with ground walnuts.
Ingredients
- Chickpea 10 oz
- Tahini 4 tablespoons
- Ground Cumin 1½ teaspoons
- Garlic 1½ cloves
- Lemon 1½ pieces
- Olive Oil 4½ tablespoons
Step-by-Step Guide
Step 1
Soak the chickpeas overnight (at least 6 hours).
Step 2
Cook until tender in a small amount of water with a pinch of baking soda (this will soften the peas).
Step 3
Then puree the chickpeas and add tahini, minced garlic, and cumin.
Step 4
Squeeze lemon juice into the puree and drizzle in the olive oil slowly. The amount of oil affects the consistency of the hummus — it can be more or less creamy.
