Description
Hummus is the term used by Arabs for chickpeas. This is the main ingredient used to make this simple nomadic sauce.
Ingredients
- Chickpea 15 oz
- Garlic 0 oz
- Olive Oil 5 fl oz
- Black Cumin (Cumin) 1 tablespoon
- Tahini 5 oz
- Salt to taste
- Paprika to taste
- Pita 10 pieces
- Pistachios to taste
- Lemon ½ pieces
Step-by-Step Guide
Step 1
Rinse the chickpeas well and cover them with cold water. Allow them to soak for 8 to 12 hours.
Step 2
In the same water, bring the chickpeas to a boil and cook for 3 hours.
Step 3
Cut the top off the garlic head, place the garlic on a piece of foil, drizzle with olive oil, wrap it in the foil, and bake in an oven preheated to 355°F for 45 minutes.
Step 4
Toast cumin seeds in a dry skillet.
Step 5
Grind it in a mortar along with salt and two cloves of fresh garlic.
Step 6
Drain the water from the chickpeas into a separate container, as it will be useful later. Transfer the chickpeas to a blender, reserving a few for garnish.
Step 7
Add tahini, olive oil, a couple of spoons of the cooking liquid, the juice of half a lemon, roasted garlic, and garlic-cumin puree.
Step 8
Blend until smooth. Taste and add salt or lemon juice if needed.
Step 9
Transfer the prepared hummus to a plate, use a spoon to create a circular groove in the center, and garnish with whole chickpeas, paprika, and olive oil. You can also top the hummus with toasted pine nuts for added flavor.
Step 10
Serve with pita bread and fresh vegetables.
