Ingredients
- Eggplants 2 pieces
- Ground ancho chili pepper 5 pieces
- Honey 2½ tablespoons
- Olive Oil 2 tablespoons
- Coarse Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the oven to 430°F.
Step 2
Cut the eggplants into medium cubes and place them in a bowl. Add the halved and seeded chili peppers, honey, and olive oil. Mix well.
Step 3
Spread the eggplants and peppers on a baking sheet and place in the oven for about 30 minutes until golden brown, stirring occasionally. Season with salt and pepper.
