Honey Chicken Roll-Ups

Description
The flavor is quite interesting. In my opinion, it's something between a pizza wrap and a mild burrito.
Ingredients
- Potato 1 piece
- Skin-On Chicken Breasts 20 oz
- Celery stalk 2 pieces
- Orange Bell Peppers 1 piece
- Carrot 1 piece
- Honey 1½ teaspoons
- Red Long Chili Peppers to taste
- Salt to taste
- Tortillas 6 pieces
- Semi-soft cream cheese 6 tablespoons
- Grated Pecorino Pepato Cheese 12 tablespoons
- Onion 1 piece
Step-by-Step Guide
Step 1
Finely chop the onion and sauté it in olive oil until translucent. Add chicken cut into small cubes (about 2 cm on each side). Sauté until golden brown, then add finely chopped carrot, pepper, celery, and tomato to the pan. Season with pepper and salt. Simmer for 10 minutes. Add honey. You may need more honey depending on the acidity of the vegetables. The chicken should have a sweet flavor with a honey aroma and a slight tang.
Step 2
Heat the tortillas in the oven.
Step 3
Spread cream cheese on each tortilla. On top, layer the chicken in a rectangular shape (leaving some space from one edge of the tortilla and the bottom). In other words, the entire tortilla should be coated with cheese, but the chicken should not reach two edges. This is necessary to create the bottom of the roll and to ensure the tortilla 'sticks' to itself with the cheese.
Step 4
Sprinkle grated hard cheese on top of the chicken (about 2 tablespoons for each tortilla).
Step 5
Fold the bottom edge of the tortilla over the chicken and start rolling the wrap from the edge without the gap. The other edge should stick to the roll with cheese.
