- Heavy cream 10 fl oz
- Egg white 6 pieces
- Honey 1 tablespoon
- Sugar 5 oz
- Vanilla extract 2 teaspoons

Prepare an ice bath to cool the cream.

In a small saucepan, combine the milk, cream, vanilla extract, and honey, and bring to a boil.

Meanwhile, whisk the yolks and sugar well, gradually adding the milk mixture. Then place over medium heat, stirring constantly until the cream thickens. Immediately remove from heat, strain the cream, and cool in the ice bath.
