Description

I add turmeric for color; you can replace it with the skins of 6–7 onions, beets, saffron... or skip the coloring altogether. Instead of adjika, you can use other spices and seasonings that you prefer.

  • Salted pork belly 5 lbs
  • Water 0 qt
  • Bay leaf 4 pieces
  • Allspice berries 10 pieces
  • Turmeric 1 teaspoon
  • Garlic 1 head
  • Ocean salt 8 tablespoons
  • Adjika 3 tablespoons

Step-by-Step Guide

Step 1

Rinse the pork belly under running water. If the belly is thin, you can fold it in half and tie it with string. Place the pork belly in a pot, cover with water, add 6 tablespoons of salt, allspice, bay leaves, and turmeric.

Step 2

Boil for 1 hour from the moment it starts to boil. If there are bones in the belly and you decide to keep them, or if there is a lot of meat, it’s better to extend the boiling time to 1.5 hours.

Step 3

While everything is boiling, prepare the rub for the pork belly. Crush the whole head of garlic with two tablespoons of salt, add adjika, and mix well.

Step 4

Remove the pork belly from the boiling water and let it cool until it can be handled without burning.

Step 5

Once cooled, thoroughly rub the pork belly with the garlic, salt, and adjika mixture.

Step 6

Let the seasoned pork belly absorb the mixture, ideally for a day, or at least for 4 hours. Enjoy your meal!
