  • Courgette 4 pieces
  • Garlic 2 cloves
  • Carrot 2 pieces
  • Tomatoes 3 pieces
  • Safflower Oil 3 spoons
  • Salt to taste

Step-by-Step Guide

Step 1

Peel the zucchini. For larger zucchini, also remove the seeds. Cut into medium-sized cubes. Grate the carrot using a coarse grater. In a deep skillet, pour in 1 tablespoon of sunflower oil, add the zucchini and carrot, and pour in half a cup of water. Place on medium heat and cover with a lid.

Step 2

Chop the tomatoes finely. When the zucchini becomes soft, add two tablespoons of sunflower oil and the tomatoes. Season with salt to taste and mix well. Simmer for a little longer with the lid off. Finally, add the finely chopped garlic. You can serve it garnished with chopped herbs.
