Homemade Tomato Juice

Description

Personally, I use tomato juice in many dishes — borscht, for stewing. This juice can also be used in the preparation of tomatoes in their own juice, but that is a completely different recipe.

Ingredients

  • Tomatoes 10 lbs
  • Salt to taste
  • Ground Black Pepper to taste
  • Spices to taste

Step-by-Step Guide

Step 1

Thoroughly wash the tomatoes, cut them into quarters, and remove the stems.

Step 2

Place the prepared tomatoes in a large pot and set it over low heat, stirring occasionally.

Step 3

During cooking, the tomatoes will release juice. Bring to a boil and let it simmer for about 5 minutes, then remove from heat.

Step 4

Strain the future juice through a colander (the skins will remain in the colander).

Step 5

Put the juice back on the heat and bring it to a boil again.

Step 6

Pour the resulting juice into pre-prepared (sterilized) jars. Store in the refrigerator.

Step 7

You can add salt, pepper, and your favorite spices to the juice if desired.
