Homemade Sprats
Ingredients
- Smelt 0 lbs
- Freshly brewed green tea 1½ cups
- Salt to taste
- Vegetable Oil 3 tablespoons
- Ground Black Pepper to taste
- Bay leaf 3 pieces
- Green peppercorns 5 pieces
Step-by-Step Guide
Step 1
Remove the heads and guts from the smelt. Rinse well to remove any dark spots.
Step 2
Tightly arrange the fish side by side, belly down, in a deep cast-iron skillet. Season with salt and pepper.
Step 3
Pour strong cold tea over the fish until the layer is covered by 1 cm.
Step 4
Simmer on low heat without covering for 30 minutes.
Step 5
When the liquid has almost evaporated, add vegetable oil, whole peppercorns, and bay leaves. Cover and simmer for another 10 minutes. Let cool.
