  • Semolina 15 oz
  • Water 5 fl oz

Step-by-Step Guide

Step 1

Pour the flour into a mound on a clean surface and make a well in the center. Gradually add warm water while mixing the flour with a fork until a dough forms.

Step 2

Knead on a floured surface, alternating between fast and slow kneading, for 10 minutes or until a smooth consistency is achieved.

Step 3

Cut the dough into four pieces to work with each quarter separately. While working, cover the remaining pieces with a clean, damp kitchen towel to prevent them from drying out.

Step 4

Roll the first quarter into a long sausage shape about 1 cm in diameter, then cut it into pieces 1 cm thick. Dust the surface generously with flour.

Step 5

Method one: starting from the far edge, use the blunt edge of a kitchen knife to pull towards you on a piece of dough, causing it to curl around the knife. Carefully remove the dough from the knife, insert your thumb inside, and flip it inside out. Repeat, and soon you will get the hang of it.

Step 6

Method two: poke your thumb into the center of a piece of dough (you can roll it into a ball first for more precision), turn your thumb around to form a round disc, then take the disc and, holding it between your thumb and index finger, gently pull it towards you with your index finger. This will create a similarly charming little ear. As you prepare, transfer them to a floured baking sheet.

Step 7

Repeat with the remaining pasta, shaping and perfecting them until all the ears are ready.
